When you say "roasting soda" do you mean "baking soda"? Also, instead of roasting, you can do like my Lebanese friends showed me: after the chickpeas are cooked and cooled (or canned) put them in water and rub the peas with your fingers to remove the skins. Skim the skins off the surface of the water. Takes only a few minutes. Removes gritty texture of the hummus.

I was a cook for forty years. Restaurants, even good restaurants, add an ungodly amount of fat and salt to their food. Two reasons. They're addictive and they mask that the food may not be the best quality or perfectly fresh. Restaurant food can be served for up to a week if kept at safe temperatures. If you eat food without the added fat and salt (or at least much less) your taste buds will adjust and you'll love the natural flavors of the actual foods. Do that.

I really have difficulty eating out and especially eating any kind of salted snacks such as potato chips or nuts because they literally hurt my tongue with the excessive salt. Food without salt is bland, but too much salt is horrible. Yucck

No to the baking soda. It will taste gross AF. I use canned chick peas and its ways smooth. The cooking process softens those fibers.
